I printed off your recipe for Apricot Squares and I have a question for you. Your recipe calls for 2/3 C. dried apricots. How many apricots do you think that would take or can you chop your apricots first to get the 2/3 c. before boiling them? Would you think that if I measured out 1 cup of dried apricots, that would make up the 2/3 c. after boiling them? Doe s it matter if you use light or dark brown sugar? I have had the dried apricots for several months, looking for a simple recipe to use them in. Your recipe caught my eye right away. It uses ingredients that most cooks have on hand .
Betty, please send me an e-mail at pintsizedbaker@gmail.com I can not respond to you directly because there is no e-mail provided. Measure the apricots as you cut them to equal 2/3 cup. Honestly, if you end up with more, it won't hurt anything. I would not use less.
