Dried Fruit and Nut Bars

    I am burned out!

    Toast!

    Done!

    Just plain ol’ TIRED!

    I’m tired of the weather. I’m tired of cleaning my house. I’m tired of driving my kid to school. I’m tired of baking. (that’s kinda scary!)

    Basically, I’m tired of being tired.

    The past two weeks I’ve been anything but happy and healthy, and I feel it.

    Every morning this past week, it has been an uphill battle to get out of bed at 7:30 am. (And before you even start, yes, I know that’s not “early”! To me it is!) I was so thankful that there was no school on Wednesday because I could sleep in!

    I stay up until midnight easily. I get a lot of my computer work in between 9:30 and 12 p.m. My blog posts for the next day, editing photos, catching up on emails, FB posts and planning, loading up my pinterest account, planning my next day, and plussing the heck out of G+.

    I’ve overloaded myself the past two week with posts everyday on PSB. Plus posts on Dieter’s Downfall. I even FORGOT about two different posts and let them publish without content! OMG!!

    I think I’ve got to get my sleeping habits in order. And get back on the treadmill. No walking all week makes me a grumpy mommy. 🙁

    Sigh… I guess I’ve just been burning the candle at both ends and now I’m paying for it.

    I need to slow down and take a breath. I need some creative time to have fun in the kitchen and not make something just to have a post.

    Kinda like this post…. Honestly, on Wednesday, I seriously just threw a handful of everything into the food processor to make these bars. No measuring, no recipe, no thought other than I gotta make something… let’s see what happens…

    I think I got very lucky! I loved these and will definitely make them again!

    Dried Fruit and Nut Bars

    Dried Fruit and Nut Bars

    These no-bake bars have a little bit of everything! Try this combination or use your favorite mix of dried fruits and nuts.

    Prep Time 10 minutes
    Additional Time 2 hours
    Total Time 2 hours 10 minutes

    Ingredients

    • 10 pitted medjool dates
    • 6 dried figs
    • 1 handful of almonds
    • 1 handful of cashews
    • 1 handful of dried blueberries
    • 1 handful of dried cherries
    • 1 handful of raisins

    Instructions

    1. Place all ingredients into a food processor until finely chopped. Press into an 8 x 8 pan and refrigerate overnight.
    2. Cut into 2 inch squares and enjoy.
    3. You can also roll each square into balls if you prefer. I find that they don’t fall apart as much when I roll them up.
    4. Enjoy your snack!
