    Lovable Ombre Cake

    Love is freezing outside in the winter snow warning right now!

    I’ve been HATING this weather.

    It has been junk, junk, junk here in the DC area. We had a slight reprieve on Sunday when it got into the 40’s and melted most of the snow. But then it snowed on Monday and now it’s going to snow again tonight.

     As you might have guessed, I’m not a big fan of the snow.

    I am a big fan of Lucky Leaf Pie Filling. The good folks at Lucky Leaf sent me three great flavors to try out and make a yummy treat with. I’m a sucker for strawberry, so I used that in my Lovable Cake.Lucky Leaf Strawberry Pie Filling

    Have you ever used pie filling in a layered cake? It’s wonderful!

    You’ll need to create a dam out of frosting around the perimeter of the cake before adding the filling. This will keep the filling inside the center of the cake and not leaking out the sides of the cake. That is no good!

    Do you love my cake? Would you be disappointed if I told you this was all made from a box cake mix and (gasp!) canned frosting??  Well, sorry to disappoint, but it was.

    I made my cake batter and divided into three 1 cup servings and tinted two batches – one light pink and one dark pink. Then each cup of frosting was baked in a 6 inch round pan.

    I filled the cake with Strawberry Lucky Leaf Pie Filling and frosted the cake. I had some swirled marshmallow candies that I thought was perfect for the cake!

    To make the frosting stiffer for the roses, I simply added in some powdered sugar until it was thick enough to pipe a rose design around the edge.

    I love this Lovable Ombre Cake and I hope you do too. It’s too simple not to make!
