    When most people think of paleo treats, they think it’s gonna taste dry and bland. These Paleo Chocolate Chip Cookies are amazingly delicious!

    I know that most people think that Paleo treats are dry and bland. Well, let me tell you that these are anything but! They are loaded with chocolate chips and the coconut flour kept them soft and moist. There was nothing unsatisifying about these cookies. Coming from the girl with a sweet tooth the size of Texas, I ate these paleo chocolate chip cookies and really enjoyed them.

    Paleo Chocolate Chip Cookies

    Ingredients 

    (serves 20)

    • 1 1/2 C Almond Flour
    • 1/4 tsp baking soda
    • 1/4 tsp salt
    • 2 Tbls coconut oil melted
    • 1/2 tsp vanilla
    • 1/4 C maple syrup
    • 1 egg
    • 1/2 C chocolate chips Enjoy Life Brand

    Instructions 

    • Place the almond flour, baking soda, and salt in a bowl.
    • In another bowl, combine the remaining ingredients (except the chocolate chips) then mix in the flour mixture. Once combined then add chocolate chips.
    • Measure out 1 tablespoon sized balls of the dough and place them on a cookie sheet lined with parchment or a silicon mat.
    • Place into the fridge for 30 minutes.
    • Preheat the oven to 350 deg F.
    • Bake the cookies for 5 minutes and then flatten them slightly with a spatula and continue baking for 7 minutes.
    • Cool on a wire rack and enjoy warm with a glass of Almond Milk.
