Peeps Party Cake and Cookies

    Today, I’ve got fun cake and cookies. I had a fun time making this cake with the pink and yellow decorations and the fun summer combination of the Lemonade and Bubble Gum as just perfect!

    My daughter loved the look of this cake! She thought it was quite hilarious that I put the Peeps on the cookie and then stood them up on top of the cake! She like the lollipop idea of them but had never seen lollipops sticking out of a cake like that. 
    I’ll take that as a nice compliment.
    She also enjoyed the pink and yellow swirls that I did with the frosting. It kinda looked like pretty flowers. 
    We really enjoyed these sweet desserts!

    My neighbor is a mother of three and a special education teacher. Just as school was ending in June she went to the doctor with a very bad headache. She was told that she had a sinus infection and was sent home. Later that night, the headache was still pounding but her speech became slurred, the color in her face turn grey and in the middle of the night she was medevaced from her home to John Hopkins in Baltimore where she underwent brain surgery.

    Of course, it was a total shock to the family and they were left wondering what was going to happen. Fast forward three months and she is doing great! She doesn’t like her haircut, but she’s grateful to be here to complain about. She’s able to play outside with her three boys and enjoyed our block party on the 4th of July. She’ll be returning to work as scheduled next week. 
    The gift box included three boxes of Mike and Ike candy, two sleeves of Peeps, two Peeps Pops and a Peeps Plush. She and her family loved it!

    Peeps Party Cake and Cookies

    Prep Time: 45 minutes
    Cook Time: 20 minutes

    Ingredients

      For the Cake and Cupcakes

      For the Buttercream Frosting

      • 3 sticks Butter
      • 1/4 C Shortening
      • 2 pounds Powdered Sugar
      • 3-5 tablespoons Milk
      • 1 teaspoon Lemon Extract (or vanilla extract)
      • Pink and Yellow Food Coloring – I used Neon

      For the Cookies

      • 1 Pink Lemonade Sugar Cookie bag mix, plus butter and egg as required
      • 4 boxes Lemonade Peeps
      • Paper Straws or 12 inch lollipop sticks
      Instructions
      Make Cake Mix according to directions. Add 1/3 of the batter to a prepared 6 inch cake pan. Add 1/3 of batter to a second 6 inch cake pan and use the remaining 1/3 to make some cupcakes. Bake as directed.
      Make Cookie Mix according to instructions. Measure out batter in a two tablespoon cookie scoop and place on a parchment lined cookie sheet. Place a straw or lollipop stick under the dough ball and flatten to 1/2 inch thickness. Bake as directed.
      Make Buttercream frosting in a mixer with a paddle attachment. Cream Butter and Shortening and add sugar milk and lemon extract. Add more sugar/milk as needed to achieve desired frosting thickness. Remove half for the cookies. Tint half pink for the cake.
      Frost the cake and decorate with the Bubble Gum and Lemonade Peeps in an alternating pattern. Use a dab of frosting to help adhere the Peep if necessary. Place the cake into the fridge.
      Prepare piping bag fitted with an open star tip. Drip Pink and Yellow food coloring down 4 sides of the bag then add in the frosting. Some food coloring will come out the tip, prepare it over the sink. Decorate the cookies and place a Lemonade Peeps on top. Frost your cupcakes, too.
      Just before serving, stand three cookies up in the cake.
