    How can anyone be in a bad mood when there are fun, delicious, and colorful rainbow sugar cookies around? These bright sugar cookies start with a pretty basic recipe and then are colored and flavored with jello. They can help brighten up any day! Get the kids involved and have them mix the jello into the dough and press out the cookies. It’s like magic when you’re done! PS+Rainbow+Cookies+(3)

    Have I mentioned that I recently participated in a fundraiser? No? You didn’t know??
    Well, then, let me tell ya!
    Cookies for Kids’ Cancer is a group that raises money for Pediatric Cancer research. It’s a wonderful organization that helps so many families.
    Can you believe that cancer claims the lives of more children annually than any other disease – more than asthma, muscular dystrophy, multiple sclerosis, and AIDS combined. *Stats from HERE*
    That makes me sad.
    So, my daughter’s school, Morgan Academy, held a Bake Sale and sold raffle tickets to raise money to donate to the foundation.

    I baked these Rainbow Cookies for the fundraiser. These made me happy!
    I saw the Jell-o Cookies on I Heart Naptime and I followed her recipe. Only, I made all the colors of the rainbow.

    Rainbow Cookies

    How can anyone be in a bad mood when there are fun, delicious, and colorful rainbow sugar cookies around? These bright sugar cookies start with a pretty basic recipe and then are colored and flavored with jello.

    Prep Time 30 minutes
    Cook Time 10 minutes
    Total Time 40 minutes

    Ingredients

    • 3 1/2 cups flour
    • 1 teaspoon baking powder
    • 1 1/2 (3 sticks) cups butter, softened
    • 1 cup sugar
    • 1 egg
    • 1 teaspoon vanilla
    • Cherry, Orange, Lemon, Lime, Wild Berry, and Grape Jell-o

    Instructions

    1. Preheat your oven to 350 degrees F and prepare a cookie sheet with a baking mat or parchment paper.
    2. Beat butter with a paddle attachment until creamy. Add is sugar, egg, and vanilla and beat until combined. Gradually add in flour and baking powder until blended.
    3. Divide dough into 6 sections. Sprinkle 2 tablespoons of Jell-o onto each section. Knead together with dough.
    4. Shape dough into 1-inch balls and roll in the extra jello from the packets. Place on a baking sheet lined with a silicon mat and flatten with the bottom of a cup.
    5. Bake 8 to 10 minutes. Cool for 2 minutes on the baking sheets, then transfer to wire rack and cool completely.

    Notes

    I did have to add some purple food coloring to the grape jello. Otherwise it was a bit more grey and didn’t look too appetizing.
