No? You didn't know??
Well, then, let me tell ya!
Cookies for Kids' Cancer is a group that raises money for Pediatric Cancer research. It's a wonderful organization that helps so many families.
Can you believe that Cancer claims the lives of more children annually than any other disease - more than asthma, muscular dystrophy, multiple sclerosis & AIDS combined. *Stats from HERE*
That makes me sad.
So, my daughter's school, Morgan Academy, held a Bake Sale and sold Raffle tickets to raise money donate to the foundation.
I baked these Rainbow Cookies for the fundraiser.
These made me happy!

I saw the Jell-o Cookies on I Heart Naptime and I followed her recipe. Only, I made all the colors of the rainbow.
Rainbow Jell-o Cookies

Prep Time: 1 hour
Cook Time: 9 minutes
Ingredients
- 3 1/2 C Flour
- 1 tsp Baking Powder
- 1 1/2 (3 sticks) C Butter, softened
- 1 C Sugar
- 1 Egg
- 1 tsp Vanilla
- Cherry, Orange, Lemon, Lime, Wild Berry, and Grape Jell-o
Instructions
Beat butter with a paddle attachment until creamy. Add is sugar, egg, and vanilla and beat until combined. Gradually add in flour and baking powder until blended.
Divide dough into 6 sections. Sprinkle 2 tablespoons of Jell-o onto each section. Knead together with dough.
Shape dough into 1-inch balls and roll in the extra jello from the packets. Place on a baking sheet lined with a silicon mat and flatten with the bottom of a cup.
Bake 8 to 10 minutes. Cool for 2 minutes on the baking sheets, then transfer to wire rack and cool completely.

I tried your recipe - works great. All the colors are beautiful except for the purple. I used grape jello but the purple cookies came out an ugly gray-lavendar. Did you use anything different?
ReplyDeleteNo, but then again, my batter was really small when I got to the purple cookies. I think I got all of 6 out of what was left. I didn't reduce the amount of jell-o for the smaller amount of batter. You can try some food coloring to brighten it up next time.
DeleteHi these are great! I'm having my daughter's rainbow theme party on Sunday and was going to make these. This is a prego brain question sorry, but after I flatten them with cup do I then cut them into circle before baking?
ReplyDeleteThey will be round when you flatten them. No need for a cookie cutter. You should add purple food coloring to the grape to give it more of a purple color. Have fun!
