Pineapple Cobbler


I LOVE PINEAPPLES!

This week has been dedicated to Pineapple Treats, so here's another great recipe.

The summer nights are cooling off and the sun is setting earlier and earlier. 
Sometimes we enjoy an evening fire on the back deck while having a sweet dessert.

I made some Pineapple Cobbler in a jar to be a bit more portable.


Just pop these into the oven while eating dinner and you can enjoy a warm dessert with some whip cream or ice cream for dessert.

Here's What You Need:
1 C Flour
Pinch of Salt
1 C Sugar
1 Tbls. Baking Powder
1 Stick Butter, Melted
3/4 C Milk
1 20 oz. can of Pineapple Chunks, drained

Preheat oven to 375 deg F.

Combine dry ingredients and add in milk. Stir to combine. Add in the melted butter and fold until combined.

Add to a 9 x 13 pan and cover with pineapple chunks.

If making in jars, add 3 heaping tablespoons of the batter to each half pint and add 5 pineapple chunks. I just had 4 jars, so I added the remainder of the mix to an 8x8 dish and baked everything for 25 minutes.


You'll see the pineapples drop to the bottom of the dish and the cobbler will puff up and turn golden brown.

Allow to cool slightly and serve with warm with ice cream or whipped cream.

With the cobbler baked in to pan, I just scooped it up and put it into a bowl. 

I made some whip cream and ate it up!

  2. Apple, peach, berry--the thought has never crossed my mind to use pineapple, but now it makes so much sense! It sounds divine! So tropical and fruity. Yum!

    1. Yes, I thought it was a nice twist. I had it in a stack of old magazine clippings and it was shown as a Thanksgiving dessert. I really don't see it replacing my Pumpkin Pie this year.
