For my daughter's Special Graduation Celebration I asked her what kind of brownies she wanted. She requested brownies with vanilla frosting and chocolate on top!
I did my best to comply... however, plain 'ol vanilla frosting was just so boring and just would not do for the blog. So, I totally changed the request to make a presentable treat for the blog.
I know, I know!! I'm terrible. My daughter asked for a simple treat, and I go and mess with it.
But they were so good! It was worth it!
I looked up recipes online and found one that I liked, so, again, I messed with it and made it my way.
Recipe adapted from Two Tiny Kitchens
First Layer - Brownies
1/2 C Butter
1 C Sugar
4 Eggs
1 tps Vanilla
1 C Chocolate Syrup
4 oz Milk Chocolate - melted and cooled
1 C Flour
Mix the butter, sugar and eggs. Add the vanilla to combine. Mix the syrup and melted chocolate and fold in the flour. Line a 9x9 baking dish with 2 pieces of foil to form a sling. Bake at 350 for 30 minutes.
Cool brownies for at least an hour. I popped them in the fridge to speed up the process.
Second Layer- Frosting
1/2 C Butter
2 C Powered Sugar
2 Tbls Cherry Juice
10 Cherries - chopped up
Cream the butter and 1 cup sugar. Add cherry juice and remainder of sugar. Mix in the chopped cherries just until combined. Layer over the brownies. Let harden in fridge.
Third Layer - Chocolate Shell
6 Tbls butter
1 C Chocolate Chips
Melt together in microwave for 45 seconds and stir to a beautiful, glossy finish. Pour over the frosting, smooth with an offset spatula and let harden in the fridge.
Isn't this chocolate coating beautiful? I just wanted to lick it up!
*NOTE: You want the frosting to be cold and you want to layer the chocolate quickly so the butter does not melt.

Removing the brownies will be super easy from the pan with the foil sling and the best part is - no pan to clean up! Score!!

I would definitely make these again!
As for my daughter, she was a bit ticked with me. Even though they were a pretty pink inside, she wanted vanilla frosting. Next time, she'll get it her way...
She did forgive me when I gave her a new Lalaloopsey Doll House.
All is good in the household again :)

ReplyDeleteActually, not as much as you would expect. I really only got a good cherry flavor when I bit into a cherry. Other than that, it wasn't overly cherry tasting. The chocolate still was center stage.
