Do you like to make Cake Pops with the stick up, but end up with a mess on the bottom? Or when you pick up the pop, you realize that there is no candy coating on the bottom "foot" of the pop?
I call them "Candy Apple Style" Pops because they look like, well, Candy Apples.
Well, here's a little trick that I like to do to ensure that.
First, pre-stick the cake pops flat on the cookie sheet. It'll help to create a flatter bottom.
Second, place candy disks down every 2 inches.
Third, dip your pop, tap off the excess, then place it on top of the candy disk.
Easy!
The candy coating will ooze down to cover the disk and hide it. There will be a bit of an extra candy crunch at the bottom. They stand up straight. They have a flat bottom with no hole.
Try it next time and they will look great on your dessert table!

That's a great idea! The only problem is I usually do custom colors. Ooh, I just thought of a similar idea using the custom colors. I could just pipe a small disk for each pop before dipping them. Thanks for the great idea! Of course, the next trick is always making enough of the 'custom color' so I don't have to attempt to recreate it. LOL! Thanks for sharing your ideas!

ReplyDeleteI have the same problem. What has helped is to put them in the fridge for a while before dipping. I tried freezing first, that helps, but as they start to thaw, the coating cracks.
DeleteDorthy and Tina - Use LESS frosting. Cool the pops in the fridge for 15-20 minutes and then let them sit out for 5 minutes before dipping them. If the cake is too cold, the cracks will happen as the cake warms up and expands. Take a dozen pops out of the fridge, add the sticks then go back and dip the pop. Hope this helps.
