Citrus-Hazelnut Bars


Spring is quickly turning into summer. 
We've already had the Slip N' Slide out for an after school  play date! 
Tank tops are on and sweaters have been put away for the season. I love changing out my closet and re-discovering some of my favorite clothes! What's even better, is when they still fit!
School lets out on June 1 - I can't believe my kid is "Graduating" from Kindergarten!

As I approach the end of my free days, I've decided to make some "adult" treats. I mean... how many kids LIKE nuts in their treats. Not mine! I have to make cookies with and without nuts!

So, I found this Yummy Lemon and Orange bars with a Hazelnut crust topped with more hazelnuts and I knew that I had to make it - FOR ME!!


Here's What You Need for the Crust
1/3 C butter
1/4 C sugar
1 C Flour
1/3 C finely chopped toasted hazelnuts

Beat the Butter until smooth, add sugar until combined. Add in the flour and HALF the hazelnuts. The crust will be crumbly, but press it into a 8x8 pan and bake at 350 for 10 minutes.


Here's what You Need for the Filling:
2 eggs
3/4 C sugar
2 Tbls flour
1 tsp orange peel
1 tsp lemon peel
2 Tbls orange juice
1 Tbls lemon juice
1/2 tsp baking powder
remaining hazelnuts
Powdered Sugar as garnish

While the crust is baking, mix the ingredients together. Beat for two minutes and pour over hot crust. Sprinkle with the remaining hazelnuts and bake for 20 minutes. 

Slide a knife around the edge of the pan and allow to cool.
Add powered sugar if desired. 


The recipe said I should cut into 20 bars.... well, I cut it into 9 pieces! 
Also, they did not last long enough my house, but if you want to store them, cover them and keep them in the fridge.

    1. Nut allergies are so hard to work around. Save it for a pot luck dish or take it to a friends house to enjoy with ice cold citrus tea!
