Guinness Fun-Da-Middles Cupcakes


Want something EASY for St. Patrick's Day?? 
Can't get any easier than a box mix for cupcakes! 
That's right - I said a box mix! Fun-Da-Middles box mix to be precise! 
Super easy and fast and a great way to make those fancy Guinness Cupcakes you see without the mess!





Here's what you need:
1 box Chocolate Fun-Da-Middles
Ingredients on box MINUS the water (2 eggs and oil)
1 bottle of Guinness











Here's what you do:
Buy your husband (boyfriend, brother, dad, random man) a 6 pack of Guinness for St. Patrick's Day! 
Preheat oven to 350 deg F.
Follow the directions on the back of the box, except use the Guinness in place of the water. Give the remaining Guinness to a man (because only men drink that  stuff). 
Tint the Vanilla Cream with a bit of green food coloring and place it into a baggie.
Fill the cupcake liners 1/3 full, add the cream then cover with remaining cupcake batter.


Reduce the heat to 325 to bake for 25 minutes.
Cool before frosting.






For the Frosting, I wanted something "Irish" to go with it, so I whipped up a fast and easy butter frosting.
1 stick of butter
1 Tablespoon of Bailey's Irish Cream
1-2 cups of Powered Sugar

Beat the butter until creamy, add the sugar a little at a time until thick, add Bailey's to combine. If more sugar is needed to thicken, add in gradually. This made enough to frost 6 cupcakes.
I also just dusted some with powered sugar (the diet version).






I thought about adding a flavoring the center of the cupcake as well, but then decided not to mess with it too much. 
The Guinness really adds to the chocolate flavor! You're not quite sure what is in the cupcake, but you know that something is deliciously different. 
The Bailey's really sweetened up the cupcake. My husband liked the cupcake both with and without the frosting. I'm a fan of frosting and believe it's not a cupcake if there is no frosting. It's then a muffin!

  1. So funny, I just did a VERY similar recipe... I don't like butter much so the frosting is cream cheese based instead, and I don't have the cream inside, but we're twins! ...Great minds think alike :) New follower!

  9. These look wonderful, but your comment about how only men drink Guinness is offensive. I know many women who love it! Myself included. It's an unnecessary comment in an otherwise delicious looking recipe.
