When I think of St. Patrick's Day, I think of Ireland.
When I think of Ireland, I think of an Island.
When I think of and Island, I think of Coconuts.
Coconuts?? Well, what do you expect, I was raised on an Island.... I think of coconuts.
So I made some Irish Coconut Mini-Cakes! Special, just for you!
Archer Farms products in Target makes this wonderful Coconut box mix. I know it calls itself "bread mix", but there is a cupcake recipe on the back!
I followed the directions on the back only substituting coconut water for the water.
I used my square cupcake pan and got 8 mini-cakes out of the mix.
FYI - I found it on discount sale at Wal-Mart! What a steal!

If you are a coconut fan, these are sure to please!
For the frosting, I made a coconut cream-cheese frosting.
Because I had so few mini-cakes to decorate, I made a mini batch of frosting.
4 oz of cream cheese, softened
1 1/5 Tablespoons butter, softened
3/4 cup powered sugar
1 Tablespoon of milk
1/2 teaspoon vanilla
I just mixed them together with a hand mixer and loaded up my piping bag with half the mixture.
Add 3-5 drops of green food coloring to the other half of the frosting in the bowl and mix to combine.
Place a small amount of shredded coconut in a baggie with 3-5 drops of green food coloring and tint the coconut.
Frost half the mini-cakes with the white frosting. Squeeze out any remaining white in the piping bag and mix into the green mixture. Add the green mixture to the same piping bag and frost the rest of the mini-cakes.
I used a Wilton 1M tip.
On the white frosting, I added the green coconut and on the green frosting, I added green sprinkles.
