Fun-Da-Middles Candy Cane Cupcakes




Have you seen the new Betty Crocker Fun-Da-Middles in the grocery store?? I've seen them, but wasn't too impressed initially. But then I got into this Candy Cane fix and thought about adding Candy Cane crumbs into the center filling for special holiday treat! It turned out great! 

The box makes 12 cupcakes, so I made them for my daughter's classroom Christmas party and the kids LOVED them! 

Here's what you'll need:
1 box of Betty Crocker Fun-da-Middles
2 eggs
1/4 cup oil
3/4 cup water
3 mini Candy Canes crushed up
1/4 teaspoon Peppermint Extract
cupcake pan and lines
your favorite frosting

I used the Yellow Cake mix and made as directed.
Then, I  mixed the filling with the crushed Candy Canes and Peppermint extract and stirred it up.


I put the mixture into a baggie and cut a medium sized hole in the corner. 
Fill the bottom 1/3 of the cupcake liners with the cake mix then add some of the center filling.
Top with remaining cake mix and bake as directed.

 

I think if I got the filling to stay in the MIDDLE, they would not have leaked through the sides. Oh well, better luck next time!
Let them cool before frosting and decorating them.
According to Betty Crocker, these don't need frosting. 
What?? No frosting???

It's not a cupcake if there is no frosting, Mrs. Crocker!


The centers were like Peppermint Marshmallow filling.  
Yummy, Ooegy, Gooey Goodness. 


I can't wait to try different flavors for different occasions!
