Amazing Peanut Butter No Bake Cracker Cookies

    These Peanut Butter No Bake Cookies are the perfect combination of sweet and salty! Ritz crackers add a little something to it. All you need are 3 ingredients and some laughter!

    Quick Ritz Peanut Butter No Bake Cookies

    These easy Ritz Peanut Butter Cookies are a classic in our family. They are prepared really quick, and a real nice treat. And they are so easy to make that, actually, your kids can make them for YOU!

    The chocolate cookies with a salty cracker base and aromatic peanut butter filling are perfect small bites. They are the perfect combination of sweet and salty to satisfy our cravings!

    I love being in the kitchen with my Little Cup, especially when there is no baking required!

    How to Make Peanut butter and Chocolate Cookies

    It is as easy as it can get. Bring some peanut butter on the Ritz crackers. No need to be neat about it. Next, place them in the freezer for 15 minutes while you lick the peanut butter off the knife and fingertips. 😉

    Then melt chocolate in a sauce pan. Flip the crackers with the peanut butter topping upside down into the melted chocolate. Carefully lift out and place it on the wax paper to harden. This will take just a minute. This is perfect for the kiddos to do – their fingers will get covered in chocolate, and they’ll love it!

    Kitchen Tools Used

    •  Corningware bowls – to melt my chocolates. They are the right height and width to dip pops and truffles – and cookies. They also come with a lid so you can cover it up and keep the leftover chocolate for another project.
    • Cookie Sheet with Waxed Paper – Cover a cookie sheet with wax paper to keep your workspace clean. Place the dipped cookies onto the cookie sheet and let them dry completely before stacking.
    Ritz Peanut Butter Cookies. All you need are Ritz Crackers, peanut butter and chocolate chips.

    Once all the cookies are covered in chocolate, you’re done! Now go wash the kid’s hands and put these cookies on a plate to enjoy. That’s my favorite way to enjoy them is to put them in a baggie and place them in the freezer!

    Ritz Peanut Butter No Bake Cookies

    Quick! Easy! Sweet and Salty! These Ritz Peanut Butter no-bake cookies are the perfect cookies to whip up in a jiffy!

    Ingredients 

    • 1 bag chocolate chips
    • Peanut Butter of your choice
    • 1 sleeve Ritz Crackers
    • Optional – peanut chips chocolate sprinkles

    Instructions 

    • Cover the Ritz cracker in peanut butter, place them on a cookie sheet and place them into the fridge. Melt the chocolate in a microwave safe bowl with a wide top.
    • Dip the peanut butter side of the cracker into the chocolate. Carefully lift out of the chocolate and place onto a cookie sheet lined with wax paper.
    • Once the chocolate is dry, store in an airtight container in the fridge.

    Notes

    For the peanut butter I suggest NOT using an “natural” spread where the oil separates from the peanut butter. You’ll end up with ooze marks from the leaking oils and it could make the cracker soggy.[br]I store my finished cookies in the freezer and enjoy them frozen too!

    1. I wonder if there is a way to make this into a bar cookie. Have to make two hundred cookies for hubby to take to work this year. Looking for every short cut I can find. Thanks for the great idea.

      1. Not sure how you might convert it. There are a lot of cookie bar ideas on the internet or you can just make your favorite cookie recipe, press the entire thing into a 9×13 baking dish and bake it. Then cut it into bars instead of cookies. Depending on hoe you cut them, you won’t get as many bars as you do cookies. Good luck with the baking!

    2. I used to make cookies similar to these with my grandma, we would make peanut butter sandwiches and immerse them completely with melted chocolate!

      1. Yum! I only have half a sleeve of ritz in the pantry or I’d be making these right now! Actually I m going to do have now, and tomorrow morning buy some more. I’m going to make some of the sandwiches and some of the single ones as well.

    3. These are wonderful double dunked. Try dipping them in reeves peanut butter chips melted first. Or Carmel chips. Dry then dunk again in chocolate. Soooo good.

      1. You can use milk chocolate, no problem. I’m not sure which image you’re referring to for the “plain” cookie. You don’t have to add any peanuts or sprinkles to them. My grandmother didn’t. I did just to make the cookies more photogenic.

    4. I don’t like to bake but I love to eat LOL I guess that’s why I don’t bake until now I found you : ) I am going to shock my family and friends.

      1. For these cookies, any processed peanut butter will do. I like Peter Pan… Don’t use a natural PB because the consistency just isn’t the creamiest and the oil will seep into the cracker and make them gross.

    5. Regarding the recipe as written of the Ritz PB Choc Cookie, I would need to sweeten the pb before using . . . Small amount of pwd sugar & butter mixed together or use some honey mixed into pb. (I like slightly sweet pb for a candy-like product.).

    6. I make these like a sandwich 2 crackers one on top of the other with peanut butter in the middle then cover with white chocolate or regular chocolate but we really like the white better.
