Homemade Vanilla Ice Cream

I love making homemade ice cream. It is simple to make and so much easier now that I have the Kitchen Aid ice cream bowl attachment!

This is an easy no-cook ice cream from the Ben and Jerry's Ice Cream & Dessert Cook Book. It never let's me down. Make it the day before or early in the morning to allow time to harden in the freezer.

Whisk 2 eggs until light and fluffy - approximately 2 mins
Whisk in 3/4 cup sugar a 1/4 at a time until completely blended (I suggest extra fine sugar)
Whisk in 2 cups heavy cream and 1 cup whole milk
Add 2 teaspoons Vanilla Extract
I love to use Mexican Vanilla in my ice cream. It gives it a bit more of a roasted marshmallow vanilla taste. Check it out if you're looking for something new. Only use 1 teaspoon if you do use it.
This will make 1 quart of ice cream!

Pour into your frozen ice cream bowl and let it run for 30 minutes.

You can add your favorite candy to the mix at the very end of the 30 minutes. Just chop it up and let the mixer run for 2 minutes to blend in the candy chunks. 

Add to a freezer safe container. The ice cream will be very soft. If you like half melted ice cream - go ahead and start eating. Otherwise, place it in the freezer over night. 

After a night in the freezer (12 hours) you've got some homemade delicious ice cream. Free of preservatives, additives, and a whole lot cheaper than store bought.
