Heat Vs. Chocolate

This summer has been wonderful - if you love the heat. Every summer it's hot, but sometimes you just don't realize how much it affects your day. Several years ago, when I was a flight instructor, I worked outside on the hot tarmac around the airplanes and it was a nice reprieve from the heat to climb up to 4000 feet and cool off! I always complained how HOT the summer was. Then I got an office job and was inside the nice, cool air conditioning for the hottest part of the day. I also have a car auto-starter (I highly recommend them) and I would start the car and AC five minutes before walking out to the car. I would have told you then that the summers were very nice and pleasant. 
  This year, I am trying to make cake pops and getting more and more frustrated at the heat! The melting wafers that I use melt in your hand. I like to melt them around 100 degrees and when the house was 65 in the winter, it worked well. Now my house is around 80 and the chocolate is not cooperating. It stays wet longer, won't harden up quickly, the humidity one day was enough to seize up the chocolate... it's just difficult. Wah!  Here is a picture of some melted cake pops. They used to be at the TOP of the sick!
  As a result I have to work early in the morning and late in the evening with the AC and fans going in my work space. The pops are wrapped up and put into the fridge to stay firm. It's not the end of the world, just different from working in the winter. And, I know in the winter I'll be complaining how quickly my chocolate hardens while trying to add decorations... Why can't it just be 72 degrees year round? LOL :)
